Spicy Tuscan Soup

This soup is amazing.
Hearty.
A bit creamy.
And a bit of spice.
Better yet, its done in about 30 minutes and you can make it using one pot.
How great is that?!


Spicy Tuscan Soup

Ingredients:

1 lb. spicy breakfast sausage
1/2 red onion (diced)
2 cloves garlic (minced)
3 whole potatoes
4 c. warm water
3 cubes chicken bouillon
1 c. kale (roughly chopped)
1/2 c. heavy cream
salt and pepper (to taste)

Directions:

Crumble sausage into a dutch oven and heat over medium-high heat until cooked.
Drain and set aside.

Chop onions; add to dutch oven.
Cook until onions are clear.
Add minced garlic and cook for about 1 minute.

Slice potatoes in half lengthwise and cut into 1/4" slices.
Add warm water, bouillon cubes and potatoes to the dutch oven and simmer 15-20 minutes
or until potatoes are almost done.

Add remaining ingredients as well as sausage and simmer for another 5 minutes.

Serve with bread and salad.
